Halfway between the Chamber of Deputies and the Senate of the Republic, there is a secret place where there is no other rule than those of the chef. We are at Achilli al Parlamento, a very famous wine shop in Rome, where every alcoholic desire can be fulfilled. In fact, it surrounds, around, below, above, everywhere. The Cellar is the realm of a young sommelier, Valentina Cinti, who watches over 6000 labels.
The story of Achilli starts in 1977 with the famous Roman gourmand Gianfranco Achilli, a real “myth” in the universe of the Capitoline restaurant and enology. He, flanked by his inseparable wife Bianca, to give life to this place whose distinctive features are, right from the start, the professionalism of the service and the careful selection of labels and foods. Today I am the heir Cinzia, with her husband Daniele and their son Alessio, to carry on the same philosophy.

 

But Achilli al Parliament is not just a wine shop. Passing the room with the bottles, you arrive at the restaurant, wherefrom November 2019 you can taste the dishes of the young Tommaso Tonioni. Born in 1989, he took the kitchen reins with carte blanche from the owners who believed in his vision of a kitchen firmly anchored to technique and products, interpreted with personality and audacity.

 

The chef has gained experience worldwide passing through the kitchens of Roy Caceres, Kobe Desramaults, Valeria Piccini, Victor Arguinzoniz. He later worked for two years in the brigade of Il Pagliaccio and one in Pierre Gagnaire’s court, experiences that helped shape his vision of cooking and his method. However, after five years, the arrival of Tonioni caused the restaurant to lose its Michelin star.
