Pipero has left the Rex hotel for a new and elegant location in Corso Vittorio Emanuele, in front of the Piazza della Chiesa Nuova. Alessandro Pipero, eight years after the first opening in via Torino, finally has a space of his own where he gives his best. A large modern and bourgeois room, with precise geometries and sober lighting.
The new habitat of Pipero Roma covers 400 square meters.It is elegant, sober and not overly refined like the previous venue.There is an intimate room on the mezzanine floor, ideal for a special occasion or for a private meeting. It made even warmer and more welcoming by the wooden floor that we find throughout the project. Instead, a unique table in the Cellar allows you to dine in a unique setting surrounded by the most varied and precious bottles from all over the world.
Alessandro Pipero is a well-known figure in the world and outside. He directed Antonello Colonna’s Labico for years, then in 2008, he set up his own business in Albano, moving to Rome in 2011. With Pipero in the room, there is Achille Sardiello,chef sommelier and restaurant manager, with solid experiences in starred restaurants, and Riccardo Robbio.
Conducting the orchestra in the kitchen is Ciro Scamardella, a thirty-year-old chef already with Martin Berasategui and then for a long time alongside Roy Caceres. The young man brought a breath of fresh air to Pipero Roma’s card while remaining in total harmony with the charismatic patron. Between refined dishes and divertissement, combinations with millimeter balance and flavors that instead overwhelm for intensity. He was responsible for the famous carbonara di Pipero, considered one of the best in the Roman gastronomic world.
The restaurant boasts a Michelin star.
