From the Altare Della Patria to the Cupola of San Pietro and the gardens of Villa Medici, admire this 360° view at the Micheline-starred fine dining restaurant “La Terrazza”. Located on the last floor of the Hotel Eden, the menu is curated by the chef Fabio Ciervo, which already won a Michelin star in 2012. His creations are creative and original, inspired by the classic Roman food, exquisite ingredients, beautifully prepared and an unforgettable experience. “My style of cooking is based on continuous research around my guiding principles of innovation, wellbeing, ingredients, taste and art,” says the chef.
For starters we have the new addition, Trippa followed by the mains that include Calamarata pasta cooked in tomato water with marinated Martini anchovies, Spaghetti Cacio and Pepe from Madagascar, with roses buds one of the key recipes of the chef, and Crispy red mullet with broth and seaweed tartare. The dinner is complete with an amazing Tiramisu with a twist. But chef Cervo also curates la Libreria, the elegant room perfect for a tea or a meeting. The best is tasting one of his smoothies after a session at the spa.
